250 g carrot, cut into pieces
100 g gluten-free cooking chocolate (I used 70% cocoa)
Preparation with Thermomix®:
Line a baking pan with parchment paper (or grease with coconut oil and dust with flour) and set aside.
Start by placing a bowl on top of the Bimby® lid, weigh the flours, add the baking powder, mix, and set aside.
Place the chopped carrot in the bowl and grate for 15 sec/speed 9.
Add the eggs, sunflower oil, and sugar, and mix for 1 min/speed 6.
Add the flours and baking powder, and mix for 15 sec/speed 3. If there is flour on the sides of the bowl, gently mix with a spatula, pour the batter into the pan, and bake at 180ºC for 30 to 40 minutes. Remove and let cool.
In the clean bowl, place the chocolate and grate for 5 sec/speed 9. Add the coconut oil and heat for 2 min/50°C/speed 2.
Pour over the cake and serve immediately 😋
Traditional preparation:
Line a baking pan with parchment paper (or grease with coconut oil and dust with flour) and set aside.
Start by placing a bowl on a scale, weigh the flours, add the baking powder, mix, and set aside.
In a food processor, chop the carrot or grate it manually.
In a bowl, place the eggs, sunflower oil, and sugar, and beat with a mixer until it becomes a homogeneous mixture. Add the carrot and beat a little more to mix well.
Add the flours and baking powder, and fold in with the mixer on low or with a wooden spoon. Pour the batter into the pan and bake at 180ºC for 30 to 40 minutes. Remove and let cool.
To melt the chocolate, I suggest doing it in a double boiler: a pot on the stove with boiling/very hot water over which you place a stainless steel or Pyrex bowl with the chopped chocolate and coconut oil. Stir with a whisk until melted.
Pour over the cake and serve immediately 😋
TIP: If you have the Thermomix Sensor, just place it in the batter when you put it in the oven, and as soon as the cake is ready and perfectly done, the Sensor will "call" you!
I hope you enjoy and give it a try.
